Right now Parsnips are in season and they are just uber tasty with Carrots when roasted.
3 Medium Carrots
Seasonings too taste
Extra Virgin Olive Oil
Peel and wash vegetables
Chop in half horizontally and carefully cut each half into 3
Line a baking tray with grease-proof paper and drizzle with Extra Virgin Olive Oil and sprinkle with Sea Salt
Bake on a medium heat in oven until golden brown
