Cashew Creamy Pasta Sauce

That awesome feeling when an recipe turns out better than expected..

This deliciously creamy sauce can be used as a substitute, for creamy savoury recipes.


Makes 2-3 Side portions


Ingredients

1 Cup Spelt pasta (or plant-based pasta of choice)

125g Cashew Nuts

Salt and Pepper too taste

2 tsp Garlic & Coriander seasoning

1/2 Lemon



Method

  1. Cook pasta according to pack instructions



  1. Drain when cooked and leave to the side

  2. Soak cashews for minimum 1 hour preferably overnight

  3. Add soaked cashews and 1/2 cup of water to blender


5. To a heated pan add cashew sauce with plant-milk

6. Stir mixture together and add seasonings on a low heat



7. When simmering stir in cooked pasta




Serve alongside a delicious dish.
