Double the recipe for a larger portion or for 2 people.
1 Med/ Large White Sweet Potato
1 Med/Large Avocado
Seasonings: Salt and Black peppercorn too taste
1/2 Cup of Cashews
Wash Sweet Potato and pierce all over with a fork
In a pan of boiling water add Sweet Potato
Mash ripened Avocado in a bowl
Add a squeeze of lemon and seasonings
When the sweet potato has softened.
Cut vertical 3/4 and fill with Avocado and sprinkle cashew nuts
Optional: Add Sweetcorn,
Serve alongside steamed vegetables
