For the moments where you just crave something fried this makes a suitable middle ground.

Jackfruit is becoming more widely available in supermarkets. Best deals can be found in Asian and Afro-Caribbean stores.

Ingredients

565g Jackfruit in brine/water

1/2 Cup Plant milk

Seasonings: Sea Salt, Black peppercorn, Cayenne, Smoked Paprika

Extra Virgin Olive Oil

Batter

Wet Mix

1/2 Cup spelt flour (or other whole food flour like Chickpea)

1/3 Plant milk

Salt, Pepper

Dry Mix

3/4 Cup Spelt flour


Method

  1. Drain and rinse off Jackfruit

  2. Cut into smaller chunks if desired

  3. To a bowl add Jackfruit and mix in seasonings (optional step marinate for 20mins)

  4. In a bowl add and mix the wet batter ingredients

  5. Add flour to another bowl

  6. In a sizeable pan, on a high heat add oil about 1/2 inch deep

  7. While pan is heating. Dip Jackfruit into wet batter covering all areas and coat with the dry spelt flour. Repeat step Double Dipping!) Use more dry flour if needed.

  8. To test if the temperature is ready for shallow frying, add a small amount of the wet batter to see if tiny bubbles surround it.

  9. Once ready add Jackfruit to pan to cook and brown batter.

  10. Rotate pieces until all areas have browned and crisp

  11. Place cooked pieces onto a piece of kitchen towel to drain off excess oil.

Have it in a wrap with salad, on it's own or whatever you can think of. Enjoy!
