Rainbow Stir Fry



Ever had one of those days when cooking feels like the last thing you want to do.

This recipe is perfect for beginners, ready in under 10 minutes and keeps things healthy and nutritious. As this recipe is very flexible feel free to adjust quantities!




Ingredients

2 Medium Carrots

1/4 Broccoli Floret

2 Cup Mushrooms

1 Cup Black Beans

1 Cup Sweetcorn

2 Spring Onion Stalk

1 Medium Red Onion

1 Large Clove Garlic

1 Medium Red Pepper

1 tbsp Tamari Sauce

'Knob' of Ginger

2 Tbsp Agave/Carob/Date Sugar

4 Tbsp Avocado/Olive Oil or other healthy oil


Seasonings to taste

Sea/Himalayan Salt, Crushed Black Peppercorn, Vegan Seasoning


Method

  1. Peel & chop all the vegetables. Dicing the ginger.

  2. Warm the oil in a pan and add the seasonings

  3. Add vegetables to the pan for 3 minutes to soften and brown

  4. We used black beans in a carton. Drain beans and stir in. Save the water this is to be used as stock in a moment alternatively use vegetable stock.

  5. Mix Tamari sauce and sweetener in a small dish and then add to pan

  6. Add the bean water or vegetable stock

  7. Cook for a further 2 minute

Optional additions

  1. Buckwheat noodles

  2. Quinoa

  3. Sweet Potato Chunks

To retain nutrients and firmness do not overcook.
