Mash potato is really easy to make and versatile to use.
For this recipe the orange or white sweet potato variety work well.
It can be served as a Shepherds Pie or a Tasty Vegetable Stew served with Mash.
750g Sweet Potatoes (White or Orange)
1/2 Cup Plant Milk
1/2 tbsp Olive Oil
Sea/Himalayan Salt, Crushed Black Peppercorn too taste
*Optional Paprika, Chilli flakes, garlic
Peel sweet potatoes & Wash
Cut into quarters
Half fill a suitably sized pan with water and place onto cooker at a medium heat
Add potatoes and boil until soft
When soft drain water and place potatoes into a mixing bowl
Add seasonings and oil Tip: Make it garlicky by adding a minced clove of garlic. Or an extra kick with paprika and chilli
Start mixing with an electric hand whisk adding milk gradually until desired consistency. Be careful not to add too much milk at once unless you want runny mash!
