Shepherdless Pie

Easy and comforting twist on a old classic


Ingredients

1 Cup of lentils

2 Large Sweet potatoes

1/2 Cup Frozen mixed vegetable

1/2 Cup Chickpeas

1 Garlic clove

1/2 Large Onion

1 tbsp Extra Virgin Olive Oil

1/2 Vegetable stock cube

1/3 Cup Plant milk


Seasonings

Sea/Himalayan Salt, Crushed Black Peppercorn , Paprika, Cumin too taste


Method

The Mince

1. Cook lentils and chickpeas according to pack instructions

2. When lentils are soft add Chickpeas to lentils and 1/3 cup of water

*if using the carton or can of chickpeas used the chickpea water instead

3. Add vegetable stock cube

4. Finely chop garlic,onion and fry in some heated oil until onions are translucent.

5. Add seasonings

6. Add cooked garlic, onion, chickpeas, mixed veg to lentil mix

7. Add 1/2 cup of water

8. Stir in all ingredients and simmer for 5minutes

9. Place into a baking dish


The Mash

1. Boil sweet potato until soft

2. Cool and remove skin

3. Place into a bowl with milk whisk or mash

4. Add Salt and Pepper to taste

5. Spoon the mash on top and smooth


Bake for 10 minutes or until brown
