Another way to make healthier but delicious pancakes is by using Spelt flour a versatile and wholewheat flour.
1 Cup Spelt Flour
3/4 Cup Plant Milk
1 tbsp Flaxmeal
1/4 Cup Coconut/Brown Sugar/ Date Syrup/ Agave Nectar or alternative sweetener
Fresh fruit of choice
To a mixing bowl add the pancake ingredients adding milk gradually until the mixture is smooth. You may need more or less try to gauge it.
Leave to thicken for 5 mins
Using a frying pan add the coconut oil to cover the base of the pan and melt on medium heat.
Measure out pancake mixture into a 1/4 cup and pour it slowly, towards the centre of the pan.
Once the edges indicate a golden brown flip pancakes over with a wide spatula
Repeat the process until mixture is finished
Top with fresh fruits and serve
