Spelt Flour Pancakes

Another way to make healthier but delicious pancakes is by using Spelt flour a versatile and wholewheat flour.

Ingredients

1 Cup Spelt Flour

3/4 Cup Plant Milk

1 tbsp Flaxmeal

1/4 Cup Coconut/Brown Sugar/ Date Syrup/ Agave Nectar or alternative sweetener


Toppings

Fresh fruit of choice

Chia Seeds


Method

  1. To a mixing bowl add the pancake ingredients adding milk gradually until the mixture is smooth. You may need more or less try to gauge it.

  2. Leave to thicken for 5 mins

  3. Using a frying pan add the coconut oil to cover the base of the pan and melt on medium heat.

  4. Measure out pancake mixture into a 1/4 cup and pour it slowly, towards the centre of the pan.

  5. Once the edges indicate a golden brown flip pancakes over with a wide spatula

  6. Repeat the process until mixture is finished

  7. Top with fresh fruits and serve
