Spiced Chickpeas with Tomato Sauce

Spice up your life with a Chickpea and Tomato combo with a kick of Cayenne.

To adjust the heat adapt the Cayenne and/or use regular Olive or Coconut oil.

Ingredients

1 Can Chickpeas (240g drained)

1 Cup Greens Kale/Spinach

1 Medium Carrot

1/2 Can Plum Tomatoes

1/2 Cup Pomodorino Tomatoes

1/2 Medium Onion 1 Garlic clove

1 tbsp Chilli Oil

Seasonings too taste: Cumin, Cayenne, Chilli Oil, Salt, Pepper, Mixed Herbs, Turmeric

Method

  1. Chop onions and fry until translucent in a heated pan with oil

  2. Peel and mince garlic then add to pan

  3. Add seasonings and stir ingredients

  4. Pour Chickpeas with its water into pan and mix

  5. Add plum tomatoes

  6. Wash Carrots and Pomodorino tomatoes

  7. Chop carrots into medallions and Pomodorinos in half then add to pan

  8. Simmer for 5 minutes

  9. Add greens and stir

  10. Simmer for a further 5 minutes

Serve with your favourite grains and steamed greens.

Tip: Also tastes good mixed with pasta
