Plant-based twist on the hearty Caribbean recipe.


Ingredients

1 Cup Red Kidney beans 3 Cups Water

1/2 Cup Creamed Coconut 2 Medium Carrots Small bunch of Thyme 1/2 Medium Onion 1 Scotch bonnet

Seasonings: Salt, Pepper too taste

Spinners 1 Cup Spelt flour 1/2 Cup Water

Pinch of Salt

Method

  1. Soak beans overnight in 1 Cup water

  2. Add to pot with remaining water

  3. Add onion, thyme, creamed coconut and whole scotch bonnet

  4. Peel, wash and cut carrots into medallions and add to pot

  5. Add seasonings

  6. Spinners: When beans are half cooked in a bowl add flour and gradually add the water to flour until mixture holds together in a stiff dough

  7. Pinch a small amount and roll into a tapered cylindrical shape

  8. Add to pot

  9. Cook until beans are soft

  10. Serve with Greens and sweet plantain
