Stir-Fry Pineapple 'Rice'

When savoury met sweet

Here is our take on the Thai inspired dish.


Ingredients

500g Tri-colour Quinoa or alternative grains

1/2 Fresh Pineapple

1 Vegetable stock cube

1/2 Medium sized Onion

1 Clove garlic

2 tsp Date Sugar or alternative sweetener

1 Cup Chopped Mixed Peppers

2 tsp Liquid/Coconut Aminos

Chilli Oil

Spring Onion


Seasonings : Sea/Himalayan Salt, Crushed Black Peppercorn , Paprika too taste

1 tsp Turmeric Powder

1 tsp Curry Powder


Method

  1. Wash and boil your chosen grain according to pack instructions

  2. Add stock cube

  3. In a large pan add enough oil to cover the base and heat on a high heat

  4. Add onions to the pan and fry until translucent.

  5. Mince garlic and add garlic along with the seasonings to a pan and stir

  6. Add mixed peppers and stir

  7. When the grains are cooked add to the pan and fold all ingredients. Add more oil if needed

  8. Using a sharp Knife cut pineapple in half. Be careful! - Scoop out the middle and cut into chunks add to the pan gently stirring. - If you want to make an impression keep outer skin for a pineapple plate

  9. Cook for further 2 minutes for flavours to fuse together

  10. Taste and adjust flavourings accordingly
