Tabbouleh-ish

This is our take on the classic Tabbouleh with a little variation



Ingredients

1 Cup Spinach

1 Tbsp Extra Virgin Olive Oil

1 Cup Quinoa, Sainsburys Freekah, Bulgur Wheat mix * Can use any grain

1 Cup Parsley

1/2 Medium Lemon

1 Medium Tomato

1/2 each Mixed Peppers


Seasonings

Sea/Himalayan Salt, Crushed Black Peppercorn To taste


Method

  1. Wash and Boil the grains according to pack instructions

  2. Dice Cucumber, Tomato, Onion, Peppers* and Chop Parsley & Spinach

  3. Toss in a bowl

  4. Squeeze half a lemon

  5. Add salt & pepper

  6. Drizzle with Extra Virgin Olive Oil

  7. Cool and add the desired amount to salad

We added some Olives and Hummus (not pictured)
