Turmeric Rice with Coconut
Tired of plain Jane grains? Add a bit of character with our Turmeric and Coconut Rice recipe.
1 Cup of Brown Rice
1/2 Cup Yellow Split Peas
1 tbsp of Creamed Coconut
1/2 Medium Onion
Seasonings: Salt to taste, 1tsp Turmeric powder (mild taste and more colour. Use 2 tsp for more intense taste)
Wash grains thoroughly
Add to rice cooker bowl with water roughly 2cm higher than grains
Cut the onion in half and peel then add to rice cooker
Add creamed coconut
Leave it to cook until grains are soft. Stirring and adding more water when necessary
Serve alongside anything saucy.
We used a Rice Cooker to cook the grains for its simplicity and ease of use.
